We won’t lie to you: things move a little slower here. And that’s entirely intentional. The gin, limoncello and arancello produced by this distillery are not the result of industrial production or automated processes. They are made batch by batch, calmly, with an almost obsessive attention to detail.
The citrus fruits come from Sóller and s’Horta, from orchards where the scent of lemon and orange mingles with the Mediterranean air. Then come the botanicals, the still, the gentle heat… and time. A lot of time.
Every bottle is different. Not too much — but enough that you can tell someone was really there making it.

Giani Ripa
Master bartender and owner of
the Cala d’Or gin distillery. With over 30 years of experience, Gianni runs the distillery and regularly participates successfully in competitions.
A craft gin distilled in Cala d’Or, in the Mijorn region of Mallorca. A tribute to this
beautiful island, “sa Roqueta”. The gin is macerated and traditionally distilled in a copper still.
We have managed to concentrate the flavours of this part of the Mediterranean by extracting natural aromas such as sea fennel, rosemary, citrus fruits, juniper and other aromatic herbs from Mallorca. Highlighting my beloved almond blossom.

Experience at the distillery

Immerse yourself in the history of gin and discover how authentic Cala d’Or gin is made right here at our distillery. Over the course of an hour, Gianni Ripa, spirits sommelier and master barman, will guide you through a unique sensory experience where you’ll learn how the distillery works and the secrets behind the production of our products.
The experience begins with a welcome drink and invites you to explore the local spices and botanicals of the Balearic Islands that bring our gin to life. You’ll learn about the origins and history of gin whilst discovering the floral notes that characterise the island, all in an intimate and personal setting.
The tasting includes a refined gin and tonic made with local botanicals and a tasting of Cala d’Or Gin to appreciate all its nuances. The activity lasts approximately 1 hour, is available in Spanish, English, German and Italian, is wheelchair accessible and offers the option of a private group session.
